Lavender Peach Bellinis

Peach season is here! To celebrate, we’ve created our own recipe for a delicious lavender and peach bellini that you can make with the lavender from your garden (or that you purchased from the store, if you prefer!). Enjoy this refreshing cocktail with friends on a summer evening.

Ingredients

For the lavender peach bellini

For the lavender simple syrup

Lavender Simple Syrup

Combine all ingredients into a medium saucepan and bring to a boil. Stir until the sugar dissolves. Simmer for 10 minutes. Remove from the heat and let the syrup steep and cool for about 30 minutes. Strain and discard the lavender blossoms. These measurements make about a cup of simple syrup. You can store the simple syrup in the refrigerator for two weeks, freeze it into ice cubes or half the ingredients to make less. Lavender simple syrup is also delicious in coffee!

Peach Bellini

Peel and slice the peaches and add them to a blender or food processor. Puree until smooth. If you need to thin it, add your lavender simple syrup. Mix your pureed peach with the lavender simple syrup in a glass or bowl and pour it into the base of the champagne flutes. Top it off with the prosecco or sparkling wine and use a spoon to pull the peach puree up the sides of the glass. Add a sprig of lavender blossoms for garnish.
